padding: 0px; margin: 0px;\">Dutch East India Company<\/em><span style=\"font-family: Georgia, 'Times New Roman', Times, serif;\">\u00a0took control of the trade in Sulawesi.\u00a0 The Dutch built\u00a0<\/span><em style=\"font-family: Georgia, 'Times New Roman', Times, serif; padding: 0px; margin: 0px;\">Fort Rotterdam<\/em><span style=\"font-family: Georgia, 'Times New Roman', Times, serif;\">\u00a0in Ujung Pandang (now Makassar) in the mid 1600\u2019s and not until 1905 they finally gained control of the whole island becoming part of the\u00a0<\/span><em style=\"font-family: Georgia, 'Times New Roman', Times, serif; padding: 0px; margin: 0px;\">Dutch state colony of the Netherlands East Indies<\/em><span style=\"font-family: Georgia, 'Times New Roman', Times, serif;\">.\u00a0 The<\/span><em style=\"font-family: Georgia, 'Times New Roman', Times, serif; padding: 0px; margin: 0px;\">Dutch East India Compan<\/em><span style=\"font-family: Georgia, 'Times New Roman', Times, serif;\">y was in control of coffee production in Indonesia during most the 1700\u2019s and introduced Arabica Coffee (Typica) to Sulawesi in 1750.<\/span><\/p>\n<p style=\"padding: 0px; margin: 12px 0px 0px; font-family: Georgia, 'Times New Roman', Times, serif;\">It took some time to arrive to Tana Toraja, Sulawesi from Minneapolis.\u00a0 Minneapolis \u2013 Tokyo \u2013 Singapore \u2013 Jakarta \u2013 Makassar and drive 8 hours north to Rantepao, Tana Toraja.\u00a0 It is the most beautiful place on earth.\u00a0 It\u2019s green, lush, rice paddies everywhere\u2014giving it a sense of calmness.\u00a0 Traditional\u00a0<em style=\"padding: 0px; margin: 0px;\">Tongkonan Houses<\/em>\u00a0cover the background with fascinating Toraja Patterns decorating the structures.<\/p>\n<p style=\"padding: 0px; margin: 12px 0px 0px; font-family: Georgia, 'Times New Roman', Times, serif;\">Indonesian coffee has traditionally been processed with the\u00a0<em style=\"padding: 0px; margin: 0px;\">Giling-Basah<\/em>\u00a0method, or wet-hulled like Sumatra.\u00a0 In 1976 TOARCO, a Japanese-Indonesian joint-venture, introduced to Sulawesi the traditional washed-process, similar to Central America.<\/p>\n<p style=\"padding: 0px; margin: 12px 0px 0px; font-family: Georgia, 'Times New Roman', Times, serif;\"><img loading=\"lazy\" decoding=\"async\" class=\"mt-image-center\" style=\"text-align: center; display: block; margin: 0 auto 20px;\" src=\"dev.cafeimports.com\/blog\/wp-content\/uploads\/DSC_0270.jpg\" alt=\"DSC_0270.jpg\" width=\"700\" height=\"1054\" \/><\/p>\n<p style=\"padding: 0px; margin: 12px 0px 0px; font-family: Georgia, 'Times New Roman', Times, serif;\">TOARCO owns\u00a0<em style=\"padding: 0px; margin: 0px;\">Pedamaran Plantation<\/em>\u00a0at 900 \u2013 1250 masl and purchases wet-parchment (at 40% moisture) from small producers at 1200 \u2013 1800 masl.\u00a0 Coffee is trucked to\u00a0<em style=\"padding: 0px; margin: 0px;\">Pedamaran Plantation<\/em>immediately and coffee gets dried on patios at their mill facilities.\u00a0 If a producer wants to sell their parchment coffee to TOARCO they need to get certified to their standards as far as selective-picking, storage, transportation, moisture levels, etc.\u00a0 Farmers are issued ID cards that allow them to sell their coffee at various purchasing points in the Tana Toraja region during the market of the week.\u00a0 Caf\u00e9 Imports\u2019 coffee comes from small producers at the higher altitude areas.<\/p>\n<p style=\"padding: 0px; margin: 12px 0px 0px; font-family: Georgia, 'Times New Roman', Times, serif;\">Most of the coffee produced in Tana Toraja is S795 variety, a Typica hybrid.\u00a0 This proves once again how important the variety translates in the cup.\u00a0 Indonesia has a great deal of Catimor, a Robusta-heavy x Arabica hybrid, but Tana Toraja has kept high-quality varieties.<\/p>\n<p style=\"padding: 0px; margin: 12px 0px 0px; font-family: Georgia, 'Times New Roman', Times, serif;\"><strong style=\"padding: 0px; margin: 0px;\">In the cup\u00a0<\/strong>you will find a nice medium to medium-high citric lemon and grapefruit-like acidity, with a full body, sweet cups, and clean. \u00a0You will also find a strawberry flavors in the finish.<\/p>\n<p style=\"padding: 0px; margin: 12px 0px 0px; font-family: Georgia, 'Times New Roman', Times, serif;\">In 2010 Sulawesi received double the normal amount of rain reducing the crop of 2011 down 70% making it unavailable for that season.<\/p>\n<p style=\"padding: 0px;
